EF lens compatibility

Will my old Sigma lenses currently attached to a Canon EOS 5 be compatible with the new Canon 30D body?

It should be compatible; EF mount-wise at least. Which Sigma lenses? Sometimes older Sigma lenses have out-dated firmware that fails to work on newer cameras (see "Sigma 105mm f/2.8 EX Macro upgrade chip" thread).

Yes, Jason. Most likely. All of the EF lenses that I have used with my old Rebel film camera worked with the new EOS SLR digital cameras.
