The funny part was that one of the photographer's acquaintances, who knew Morgan in business dealings, said to him words to the effect "That amazing! It's just like him! How did you ever get him to pose with a knife like that?" (and many others since).
JPMorgan's expression is angry because Steichen asked him to pose in an uncomfortable position.
The knife is a trick of light on the arm of the chair.
At least at the time when Morgan paid for the portrait, he didn't realize that everyone else who saw it saw him holding a knife.
